Some Seafood Recipes
Introduction.
Port Lincoln is renowned for it's Seafood. It is the home of Australia's largest fishing fleet. Abalone, Australian Salmon, Crayfish (Rock Lobster), Flathead, Kingfish, Mussels, Octopus, Prawns (Shrimp), Scallops, Shark, Snapper, Squid, Tuna, Whiting and many other species are caught from here both professionally and recreationally.
This means an abundance of fresh seafood for both the local and visitor alike.
For the visitor who doesn't have much time, it is possible to get excellent seafood in some of the local restaurants. King Neptunes on Light St and The Moorings Restaurant at the Grand Tasman Hotel on Tasman Terrace come readily to mind.
If you are fortunate enough to have the time and opportunity to prepare and cook your own seafood here are some of my favourite recipes to share with you.
These recipes have been collected over a long period of time by my wife Christine and I and have come from many sources.
Aquisition
For these recipes you need to obtain fresh seafood.
This shouldn't be too difficult for anyone living in Coastal areas. Around Port Lincoln many people have boats and spend a lot of time fishing. For those not so inclined to fish, there is a fleet of boats, factories and shops from which fresh fish can be purchased. The Fresh Fish Place and Craig Rough Fisheries, both on Proper Bay Rd are a good source of fresh fish. Australian Bight Seafood P/L on Freezer Rd is an excellent source of prawns. Bight often have 2 Kg packs of prawn meat which is excellent value.
Cooking Methods
There are many varied ways of cooking seafood. For many years most Australian seafood has been served fried in batter with chips. While this is still an excellent way to serve fish, there are many more adventurous ways of cooking fish that provide very satisfying results.
I will touch on a few of them as we go in to the recipes.
One method that is very often overlooked is the Barbecue. I invite you to try seafood on your next barby. If you have not tried it before I am sure you will find it a pleasant alternative to steak, chops and sausages. I have included our favourite recipe for marinating prawns which is ideal for the barby.
One thing you should keep in mind is that whatever method you use to cook your fish is DO NOT overcook it. Fish has far more flavour and is much jucier if lightly cooked. Overcooking will dry it out and toughen it.
Please note that most of these recipes are transportable to other species of fish. Have some fun experimenting.
